Prunes are produced by mechanically harvesting fresh plums and drying, size sorting, and thoroughly cleaning the product. Prunes are washed, steam processed, and pitted. Prune juice concentrate, a water extraction of prunes, is created by extracting natural water-soluble components through a stewing process. The solution is then introduced into a vacuum evaporator to a concentration of 70° Brix. During this process, the naturally occurring pectin helps increase the overall viscosity of the finished product.
The product can be packed in 5 gallon (59#) pails or 55 gallon (630#) drums
