Dried whole Black Mission figs are partially dried while on the tree. Figs are harvested and mechanically dried to achieve targeted moisture levels. They are then size sorted, water-washed, and thoroughly inspected. Fig juice concentrate is produced by extracting from the dried figs to remove the natural fruit sugars. The product is then introduced into a vacuum evaporator to a concentration of 70° Brix.
The product can be packed in 5 gallon (59#) pails, 55 gallon (630#) drums, or 275 gallon (3150#) totes or tankers.
